Vegan smoothies aren’t too tough, you can just just swap out the dairy ingredients for non-dairy versions. But if you add in a little tofu, you can make a more protein-rich version of a fruit smoothie. Try with a fruit-flavored tofu if you want to experiment with other tastes.
- 1/2 block of tofu, soft
- 1 cup strawberries, sliced
- 2 bananas, also sliced
- 1 cup non-dairy vegan milk
- 1 tsp maple or agave syrup
- 1/2 cup ice cubes (optional)
Add the tofu and sliced fruit to your blender, and puree until it’s smooth. Slowly add the milk and blend until evenly combined. Add your sweetening syrup, and ice (if you’re using it) until you have the right consistency for your smoothie.
Makes enough for 2 big glasses. Ok, maybe 3 smaller servings.
