These hearty little crackers are so tasty you won’t even realize that they don’t actually have any grain in them. An array of seeds are used instead of the usual grains so this is actually a paleo recipe as well as gluten-free one for tasty homemade snack crackers.
- 1/2 cup almond flour
- 1/2 cup macadamia nuts
- 1 tbs coconut flour
- 1/4 cup pumpkin seeds
- 2 tbs sunflower seeds
- 2 tbs hemp seeds
- 1 tbs ground flax
- 1/2 tsp salt
- 1 tbs vegan shortening
- 1/4 cup water
Use a food processor to mix the almond flour, macadamia nuts and coconut flour together until the nuts are nicely ground up and mixed. Add in the rest of the seeds, flax and salt and process again until you have a ground up mixture. Exact texture is up to you. Add shortening and water, and you should get a soft dough start to form.
Layer your dough ball between 2 big pieces of parchment paper, and roll it until it’s very thin. About 1/4 inch is ok, though thinner would give you a crisper cracker.
Use a sharp knife or even a pizza cutter to slice up the sheet of dough into 2-inch squares. Bake at 300F for about 20 minutes or so until they are browned and crisp.
You should get around 25 crackers with each batch.
